CHEF NICOLE BRISSON OF BREZZA AND CHEF RAY GARCIA OF ¡VIVA! TO COLLABORATE ON MEXICAN-INSPIRED DINNER

In celebration of The World’s 50 Best Restaurants in Las Vegas, Executive Chef Nicole Brisson of Brezza and ¡Viva! Executive Chef Ray Garcia will team up for a first-of-its-kind six-course dining experience celebrating the rich culinary traditions of Mexico on Thursday, June 6 at Brezza Italian in Resorts World Las Vegas.

This unique collaboration will showcase Chef Brisson and Chef Garcia blending iconic Mexican coastal flavors with classic favorites to craft an elevated menu seamlessly combining both chef’s signature styles accompanied by Chef-led tableside moments, in addition to an expertly curated wine pairing. Chef Garcia will open the feast with tantalizing fare highlighting Mexico’s coastal fare with Osetra caviar tamal with Korean sweet potato, brown butter, crème fraiche; diver scallop aguachile combining serrano, apple, pichuberry and ice plant; caracoles-burgundy snails topped with mole verde, chochoyotes, stinging nettles, salsa seca. Chef Brisson adds her creative touch to classic Mexican soul food including, pozole verde served with pickled radish, cabbage and tostadas and Heritage Farms goat birria with fresh-pressed tortillas, lime and cilantro. ¡Viva! pastry chef Chef Yanet Morales finishes off the dinner with dulce de leche panna cotta with almond tuille, vanilla and caramel.

Both Chef Brisson and Chef Garcia share a passion for supporting small farms and utilizing sustainably sourced ingredients at their restaurants. Trained in Italian cuisine, Chef Nicole Brisson’s culinary style focuses on cultivating dishes that consist of seasonal and local ingredients, which is reflected in the Slow Food Approved menu at Brezza. Chef Ray Garcia’s Mexican-American inspired menu at ¡Viva! balances tradition and innovation while using ingredients that have been produced through responsible farming and food production.
