meticulously crafted dry-aged steaks

With years of experience and a passion for the highest quality ingredients, Chef Brisson has perfected her own method of dry aging, resulting in steaks that boast exceptional flavor and tenderness.

Our Cuts

This Artisinal method of aging beef is truly an extraordinary art as less than 1% of all beef is dry aged. During the dry aging process, we control the temperature, airflow & humidity to develop our unique truffle, nutty, oaky & gorgonzola characteristics

Our Process

Dry aging is a process that goes back for centuries. Before the invention of refrigeration, dry aging (whether it was in a chamber, a cellar, or a cave) was one of the only methods of keeping meat fresh, other than smoking, brining or pickling.

Step One

The perfect air flow, not to fast and never too slow. Important to form the right crust.

Step Two

Humidity control to slow down the migration of moisture and keep natural juices from escaping.

Step Three

Accurate temperature control, to stop the meat from spoiling.

Step Four

Air sterilization to avoid potentially harmful mold to propagate.

This summer, culinary aficionados and steak lovers alike have reason to celebrate grilling season as Chef Nicole Brisson unveils her meticulously crafted dry-aged steaks, available for purchase exclusively at Brezza.
